If you want to pick and choose your departure and arrival port you have the liberty to create your own missions using the Mission Editor, but it is limited to the environments available in SSE. In fact the 30 odd missions which came with the software certainly covers a fair amount of this activity you mention. You will certainly notice the abundance of "real world shipping activity" then. You have to understand that SSE is at its infancy and as time passes you will have access to a whole lot of missions which can be downloaded for free all created by enthusiasts of the game. Instead you are given the opportunity to navigate in the port waters (where your skills can be tested) and once out of that port, you are "teleported" (transferred) to another port entrance many miles away. Yes, you can sail from one port to another but it would not make sense to simulate a trans Atlantic crossing as it will lead to boredom. Though both simulators have the "transportation" theme it is definitely different from each other and if you can accept this fact you will enjoy using SSE. It has been observed on the Forum, that there is a general tendency to use "FSX" as a datum for simulators and then compare other simulators with it. Admittedly, SSE does not cover all the ports in the world as that is not entirely feasible.
